The Madness of Monday (& a Meal Plan)

While Sunday is the real calendar-start to each week, Monday is the start of when the work needs to get done. As such, I'm always a little overwhelmed each Monday morning as I look over what I need to do for both the day and the week. After a few deep breaths (and coffee), I begin.

First and foremost to the week is my menu. If nothing else gets done, at least I have an idea of what we'll eat!!

Breakfasts: cereal/oatmeal, raspberry parfaits w/bagels, peanut butter toast, blueberry greek yogurt pancakes

Lunches: leftovers, tuna salad pita sandwiches, turkey sandwiches, spicy Thai noodles

Dinners: 
Turkey spaghetti w/salad
Chicken Fajitas

Let me do a quick review of some of our meals from last week.
  • New to us was the Minestrone Soup. This was a light version. Neither of us has ever had a real minestrone soup so I don't know how this compares, but we really liked it. Let me say that it doesn't blow other soups out of the water or anything, but it was definitely tasty!
  • Last night we tried the Maple Mustard Chicken Thighs. Because we went for a long walk yesterday, the chicken didn't get to marinade as long as Holly suggested. However, they were really fabulous anyway. I know I'll be making that marinade again!
  • We had grilled shrimp the other night and it was GOOD!! This is the one I REALLY wanted to share with you!  I didn't have a plan for the shrimp but I knew I wanted a simple,light marinade on the shrimp before I had Pat throw them on the grill. I looked around at a few marinade recipes before deciding to just make my own. I used bottled lime juice, olive oil, 2 garlic cloves (grated), and a sprinkling of chipotle powder. That was it. I let the shrimp sit in the marinade for an hour or so before they were thrown on the grill (about 2-3 minutes each side.) We have a basket thing that we cooked them in, but I would have used skewers had we not had the basket. So yummy!

Anyway, I've still got so much more I want to cover with y'all but that may have to wait for another blog post. Instead, let me share that I am finally getting back on the ball and actually re-listed something in the shop. Exciting huh!?
Around the Globe Necklace

Be prepared that I might actually get another post up today. . .or I might wait for tomorrow to share more news with you. I can't decide. I still have loads of photos to edit and descriptions to write as well as some tasks on the craft desk plus the grocery shopping and whatnot. Goodness, now my head is spinning with all that I've got to do.

  1. I know what you mean about Mondays! I always have a ton of household chores to do. I try to get them done on Monday so I can have more creative time during the week. Sometimes it works and sometimes it doesn't!

  2. I've been working on pacing myself everyday. Yes, I do still get overwhelmed like today. But I will allow things to be moved to the next day.

  3. Berry- I try to pace myself as well. I have a list that breaks down my chores by day. And if something doesn't get done. . .I just carry it over to the next day. As well, I space out chores and work in increments so that it's also broken up that way. Once I get started it's less overwhelming, but Monday mornings feel like a beast!! I'm so glad you like the necklace! Thanks so much.

  4. You are incredibly organized!!! Seriously!! I've been trying to be better about meal planning...well, I've been taking my cookbook with me in to the grocery store (especially the crockpot cook book) so I can at least buy necessary things that can actually translate in to a meal! Your post is making me hungry!!

  5. Cindy- I'm not really that organized, but I've found menu planning to be a necessity. If I don't plan them out in advance, then I'm making DAILY trips to the grocery store. Or, if I try to just buy what I think we might need without a plan, then I'll stand in front of the fridge and/or pantry for hours trying to figure out what to make. . .and then end up getting take-out or missing ingredients.
    This just works so much better for me.
    I love crockpot cooking, but couldn't imagine walking around the store with a cookbook. I'd find an app for my phone. . .
    I hope you like the recipes I shared. The beef and snow peas we had tonight and it's SOOOOO YUMMY! Thanks!
