Meal Planning (Benefits and My Process)

I don't know if your 2019 has already been as full of activity as mine, but staying organized is one of the key ways that has kept me from feeling like I'm running in circles. In addition to keeping a Bullet Journal to plan my days, I always make sure to create a meal plan each week. I've been doing this for many years and have found so many benefits to planning our menu, I thought I should give you some insight on those benefits as well as my own process for making our plan. First, let's talk about the benefits.
 Let me go into a little more detail about each of these.

1. Meal planning saves money because you're not buying items you might not otherwise use and you're not eating out as much. You're also not spending gas money on extra trips to the store because you need some additional ingredient. You'll also save money by not wasting it on throwing away food that goes bad because you didn't need it. As well, you can plan your meals based on what's on sale, what's in season, what's already on hand, and if you have coupons.

2. You can save time with meal planning because you don't have to take time away to take trips to the store every day to get the ingredients for meals. It'll also save the time spent agonizing over what you're going to cook that day. Instead, you've already planned it out.

3. By giving a little forethought to what you want to eat, you'll be able to ensure healthy meals are in your future. Often, we fall into the trap of cooking whatever's easiest and that's usually not the healthiest option. Instead, planning and shopping ahead of time are an easy way to keep you on track rather than taking the easy way out of grabbing fast food or eating junk/pre-packaged meals.

4. Making Meal Prep Easier was key for me. Knowing that most everything I need is already on hand, defrosted, and/or possibly already chopped/shredded/etc. makes the preparation of the meals go much faster and makes cooking less stressful.

5. Often, trips to the grocery store without a plan are a haze of zigging and zagging through the aisles. By making a meal plan you can make shopping easier by having a concise list of everything you need. This is especially true if you organize your list by the layout of the store. This will cut down on so much frustration and back-tracking on your grocery trips.

6. As mentioned above, having a plan will help you cut back on waste as you can plan to use leftovers from one meal for other meals or use items in the fridge, freezer, and pantry before they go bad. Lacking a plan makes forgetting about those items more likely.
We have pretty standard lunches like the one above, but it's a great opportunity to use up leftovers too. In this case, I used leftover hummus from a party as a side at lunch.

7. I know that making out my weekly menu helps me ensure that there's lots of variety in the meals we eat. Without a plan, there's the chance of eating the same things over and over. While we still have many of our favorites that I rotate, our menu lets me try out all the interesting recipes I find online and in cookbooks so we don't get bored of our favorites.

8. Finally, having a plan makes cooking more fun. Seriously! I'm not stressing about what we're going to have to eat or rushing in a frenzy through the process because I had to run out at the last minute for an ingredient. Instead, I've already thought through the process and can just enjoy the simple act of preparation.
Having a concise plan and list leaves room in your budget and cart for goodies like these snacks.

Now, it's not all sunshine and bubbles, there are a few downsides to meal planning.
- First, you may have planned and defrosted everything; but when the time comes, you're just not in the mood for what you were going to cook. 
- Secondly, sometimes your plans have to change because you have people over that you hadn't planned on feeding or you end up not being home and then you have those ingredients extra. 

One of our main pantry staples is spaghetti, but this version was special because I made the noodles myself!

For control freaks like me, those are indeed issues. But, I've dealt with them in a variety of other ways. For one, I always have the pantry/freezer staples to make simple alternative meals like spaghetti. And, if we get off our plan for some reason, I just shift the meals over a day and run them into the next week. It means that I have less to plan later, and that's always great.

Now, as for how I plan...

I use spreadsheets for everything. I just love all the little boxes! Either on Sunday or on Monday morning, I take a look at what's on sale at my favorite local store, what I have coupons for, and what I have/need to use on hand. This usually gives me a few ideas of what I can make. And, I ask my husband if there's anything he's craving (there usually isn't). From there, I start filling in my spreadsheet. Mostly, I look at the meats on sale and on hand to figure out the entree and then throw in the sides.

Most of the time, the breakfast and lunch ideas stay the same from week to week unless we're craving something in particular. Admittedly, I don't often even bother with breakfast during the week because it takes me so long to wake up. And, Pat's plenty happy with cereal most of the time. I'll usually make more of an effort on the weekends. 
This was my Christmas morning "special effort" breakfast: Monkey Muffins, baked bacon, and orange slices. 

Depending on our schedule for the week, I'll mark the days I/we won't be there so I don't over-plan. From there, I fill in the rest. If I plan to go by a recipe, I make sure to include that on my spreadsheet so it's easy to find. Once the menu is all planned out, I make a grocery list based off it, making sure to include snacks (fruit, chips, and granola bars) and any household products we need. Then, I re-make the list in the order of how I walk the store to make it easier on me while shopping. I'll admit that I usually go to two different stores: one large grocery chain for most items and a small farm market for produce. 

In addition to the weekly menu, I have a second spreadsheet of ideas for the following week. 
This one includes links to recipes that I found that I want to try and ideas I have for ingredients on hand (in the freezer or leftovers). With this list, it makes planning for the next week even easier.

I also have a whole other file of master recipes and links that I've saved by category (chicken, pork, vegetarian, soup, breakfast, dessert, vegetables, etc.) that I reference for ideas and standard recipes.  And, then there's Pinterest with its abundance of ideas. 

Once everything's planned and bought, it's important to make sure you defrost everything on time. This is often my downfall. (There's hard-as-a-rock chicken sitting on my counter right now that we're supposed to have for dinner tonight. Sigh.) I try to make sure I mark in my bullet journal to defrost what on which days, but sometimes things just fall apart. That's what those easy, pantry staples are for! And, that's okay. At least I know what we'll be eating tomorrow. And, Sunday's planned meal will just become Monday's! It's as easy as that. 
If I plan really well, I can even make some things ahead of time like breakfasts. One day I was super productive and made some easy granola and poppyseed muffins (not sure what recipe I used for these.)

I've tried to be as clear and concise as I can about my process, but I know I've left a lot open to interpretation. Please, don't hesitate to let me know if you have any questions or are curious about anything else. Have fun with it. Once you get the hang of meal planning, you'll wonder how in the world you ever made decisions about meals before.

Artisan Whimsy and Meal Plan Monday

How was your weekend? Mine seemed to pass in a flash, but thinking over how I spent the days I did get a lot accomplished. Weird right?

Moving on. . .If you are in any way interested in the bead and jewelry online presence, I'm sure you've heard about Artisan Whimsy by now. If not, let me go ahead and mention it. It's an online community of other Bead artists/makers, beaders, and jewelry artists. I'm still not completely sure what direction this site is headed, but there's a forum, chatting, tutorials, giveaways, and LOTS of bead-y friends. Head on over to Artisan Whimsy and sign up.

I don't know what took me so long to get today's menu made, but it was like pulling teeth to come up with ideas and it's still nothing spectacular. Oh well, it's done now at least.

Grilled turkey w/cauliflower gratin & salad



While the menu took me forever, I did get some other tasks accomplished.

Chandelier Crystals and My Menu


In my post about the keys I got over the weekend, I mentioned that I also found/bought some chandelier crystals. They were only three bucks each for the whole line of crystals. I'm kinda wishing I had grabbed up a few more.

Of course, I it's probably best that I wait and use the ones I actually have before I start wishing for more. See the hoarder coming out in me? Aren't they lovely though? I like that the rectangles have flat backs. It makes for so many altering possibilities!

In addition to those awesome flea market finds, I've also gotten my menu made for the week. I've actually had menus made the last few weeks, but got them done late and decided to just not post them in the middle of the week. I think I'm finally starting to get into a flow of writing a low meat menu. Of course all the yummy chicken and bacon recipes I see on Pintrest don't help this resolve at all. Anyway, here's what we'll be munching on this week.

Breakfasts: Oatmeal/grits, juice, yogurt w/granola & fruit, cereal w/fruit, blueberry whole wheat waffles

Lunches: Peanut (or almond butter) and jelly roll-ups, hummus pitas w/veggies, juice, tuna salad on greens, cheese quesidillas w/fruit

Dinners:
Grilled chicken w/grilled corn on the cob & broccoli w/cheddar cheese sauce
Fiery tofu and coconut curry soup w/rice
Meatless taco soup w/tortilla chips
Homemade pizzas

I'm still making a lot of items from the vegetarian cookbook and working on discovering more. As well < I've been attempting to just substitute or leave out some ingredients in our favorite recipes (i.e. the taco soup). So far it's working out pretty well. In shop news, I reduced the price of a few items this morning so they're now in the On Sale section of the shop. As well, these new earrings were listed.

I'm excited because I've busted out a heck of a lot of stuff here in the last few days (though it's seemed to take FOREVER). With one item left on the to do list, I'm anxious to get back in the craft room and just create to my heart's content. No worries though, I plan on sharing my altered dominoes (probably tomorrow, but don't hold me to it) and the Sequintastic blog hop is Saturday. I do hope you'll check back in!

Menu Plan Monday: Low Meat Week

We FINALLY got out of the house this afternoon and rode about four miles on our bikes. Granted, it wasn't much, but it was HOT and we were happy to be active.

When we got back I got a shower and finished up the menu so that I could share it with you wonderful peeps! I'm pretty proud that I made a menu that includes only TWO meals with meat in them. That's impressive for me. As far as backing off on the other animal products (cheese/butter), I haven't done as well. I'm working on it.

Here's the menu as it currently stands.

Breakfasts: Blueberry muffins, oatmeal/grits w/fruit, Juice, yogurt w/granola & fruit, banana cinnamon waffles (p. 57)w/fruit

Lunches: PB&J w/fruit, tuna salad on greens, hummus and veggie pita w/fruit, Juice, cheese panini w/vegetable soup, leftovers

Dinners:
Seven layer tortilla pie (recipe below)
Roasted corn, pepper & tomato chowder (p. 393) with rosemary focaccia bread
Black bean burgers w/sweet potato fries
Spaghetti squash with edamame-cilantro pesto (p. 193) w/salad
Chicken stir fry
Baked vegetable lasagna (p. 102)

The page numbers listed are for the recipes I'm using from the Cooking Light Way to Cook Vegetarian Cookbook that Pat got me last weekend. It's full of beautiful pictures, loads of information, and some really yummy-sounding recipes.

Now, here's that recipe. . . it's another one that I'm not sure where I found it.

Seven Layer Tortilla Pie   
INGREDIENTS  
·     2 (15 ounce) cans pinto beans, drained and rinsed  
·     1 cup salsa, divided  
·     2 cloves garlic, minced  
·     2 tablespoons chopped fresh cilantro  
·     1 (15 ounce) can black beans, rinsed and drained  
·     1/2 cup chopped tomatoes  
·     7 (8 inch) flour tortillas  
·     2 cups shredded reduced-fat Cheddar cheese  
·     1 cup salsa  
·     1/2 cup sour cream  
DIRECTIONS  
1.  Preheat oven to 400 degrees F (200 degrees C).  
2.  In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.  
3.  In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.  
4.  Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.  
5.  Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.  

I will be adding some avocado to the side of mine as well. I've not tested out this menu before so I don't know if it's any good and will have to let you know how it is later. I'm hoping to get it made in just a few before we head off to the funeral home for the visitation with my friend's family. It's going to be a rough evening. I'm hoping for something yummy when I get home. This might just fit that bill!

Bead Soup Sent, Menu, and New Earrings

I made it back from my convention safe and sound late Sunday night. Yesterday was totally spent on an attempt to catch up on sleep and everything else, but my attention just wasn't in it. As such; no menu was made, no blogs were read, and very little unpacking was done. Today's already looking to be a bit more productive!

Let me start by following up with my Bead Soup post from Tuesday. I showed off what I received from Karen at Over the Moon Design in that post. While I was gone, she also received her bead soup from me. Karen spilled the details of the soup I sent (so you definitely want to check out her post) but here's a few quick pics of the soup(s).

I realized while I was on my trip that I failed to fully express how very much I am enamored with the soup Karen sent me. The focal is just luscious and the beads totally make smile. I just hope I can do them justice. Thanks again Karen!!

I've got the menu made and the grocery shopping done. Even though it's no longer Menu Plan Monday, I still want to share the meals we'll be having this week so the links are there for all to enjoy!

Breakfasts: Cereal oatmeal, cinnamon rolls, raspberry parfaits, mini quiches, eggs w/bacon & toast, breakfast banana split

Lunches: Ham & cheddar paninis, tuna w/salad, pepperoni pizza puffs, soup w/grilled cheese, chicken salad roll-ups, leftovers

Dinners:
Alice Springs chicken (recipe below) w/broccoli

Here's the chicken recipe
ALICE SPRINGS CHICKEN (Makes 4 servings)
Ingredients:
4 boneless chicken breasts
8 pieces bacon, coarsely chopped
8 ounces fresh mushrooms, sliced
1 tablespoon butter
1 clove garlic, minced
4 ounces cheddar cheese, shredded

Directions:
Season the chicken with the seasonings of your choice (I use Spicy Seasoning Salt); grill until just done.
Keep the chicken warm. Meanwhile, fry the bacon in a skillet until crisp; drain on paper towels.
In the same skillet, saute the mushrooms and garlic in butter, seasoning with salt to taste. Cook until the juices have evaporated.
Place the chicken on a foil-lined baking sheet. Top each piece of chicken with 1/4 of the mushrooms and bacon, then with the shredded cheese. Broil until cheese is melted and bubbly.

Monday's Meal Plan, now with NEW recipes!

This weekend I got to help a friend move. I know that always sounds like some kind of punishment, but I was so excited about having her move back 'home' that I didn't even care. Now I'm sore as all get out and swear that moving someone should be part of a fitness routine. But, it was totally worth it. Besides, I got to count it as my exercise for the weekend!

I ended up so sore yesterday that we barely left the house. Instead, I organized my saved recipes from blogs and Pintrest to try to give us some variety in the menu. I know. . .living life to the fullest huh? Anyway, here's what I came up with for this week.

Breakfasts: Cereal/oatmeal, bagels, overnight quichiladaes, oatmeal wheat pancakes, muffins, eggs w/bacon & toast

Lunches: Chicken & cheddar paninis, curried chicken salad, bean burritos, tuna noodles, soup w/grilled cheese, leftovers, sliced chicken sandwiches

Dinners
Chicken & veggie stir fry/fried rice
Dijon chicken linguini (wheat pasta) w/salad
Scalloped ham and cauliflower w/salad

As well, I got the scalloped ham and cauliflower recipe from a friend. I don't think she'll mind if I share it here. I might be halving this one. . maybe.

Scalloped Ham and Cauliflower (low-carb)
2 lb bags of cauliflower, drained thawed and chopped
8 oz grated cheddar cheese
1 cup heavy cream
2 eggs, beaten
1 pound of ham cubes
salt and pepper to taste
Beat eggs and add to cream. Mix in cheese and cauliflower, add ham cubes and bake at 375 degrees for 45 mins.

Sounds easy and yummy!!

It's a really beautiful day today so I've got the windows and doors open. The kitties are LOVING IT!! I'm just trying to stay focused long enough to get some work done. Dang, it's hard!

Breakfasts: Peanut butter banana smoothies, breakfast burritos, cereal/oatmeal, waffelized monte cristo sandwich, eggs w/bacon & toast, whole wheat carrot muffins

Lunches: Paninis, leftovers, soup w/grilled cheese, bean burritos, chicken salad sandwiches, pepperoni pizza puffs, turkey quesidillas

Dinners:
Turkey chili w/rice
Grilled shrimp w/green beans & crispy smashed potatoes
Ham steak w/mac-n-cheese & peas

Monday Menu and Madness

I'm constantly amazed by how much more I can get done in the mornings when I actually wake up with/before my alarm clock!

Anyway. . .we had a busy weekend with friends celebrating 40th birthdays (it was a friend's and Pat's coming up in a few weeks.) There was lots of beer drinking and eating of these
I think I've FINALLY got all the crawfish juices out from under my nails!

Now it's time to share what meals I have planned for this week

Breakfasts: Banana bread, french toast, peanut butter toast, cereal/oatmeal/grits, hashbrown baskets, cheese omelets, waffleized monte cristo

Lunches: Chicken bacon ranch paninis, leftovers, soup w/grilled cheese, turkey sandwiches, tuna noodles, pepperoni pizza puffs, bean burritos

Dinners:
Easy pork chops with gravy (crockpot) w/field peas, rice, & salad

I think I might be a bit ambitious with all the new recipes, but they all sounded so darn good!!

Breaking out the Bullet Post and a Meal Plan

I'm sure y'all are plenty tired of pictures from my vacation. Here's just one more (for now) of what my view was most days there.

After a week of Spring Breaking it, I've got tons to catch back up on online, business-related, and around the house. There's all kinds of tidbits to share so this will be a bit of a scattered post. (Caution, lots of exclamation points ahead.)

~ First a funny. Pat put the location of the house we rented for the week in the GPS as "Spring Break 2012." So when we arrived there she said, "Now arriving at your destination; Spring Break 2012." It was awesome! (I'm easily amused.)
~ Before leaving for the week, I submitted my Hunger Games Necklace post to a few sites and the kind jewelry editor over at Craft Gossip actually featured it as Jewelry Inspired by The Hunger Games!! Woot!

~ While at the beach, I had some time to catch up on my blog reading (somewhat) and discovered that I had won the Art Bead Scene weekly giveaway of some Gaea beads. Hurray!
~ Jenna over at Honey Bijou named me as one of her March 2012 Hive Five. I'm on the list with some pretty impressive individuals and am blown away by this honor! Thanks so much Jenna!!

Craft Fairs, Menu, and Etsy News

I just want to mention that I attended TWO craft fairs this weekend. It was GREAT! I got to get some exercise and look at arts and crafts at the same time. That's my kind of workout! Here's just a few shots I got of the Fairhope Arts and Crafts Festival.

Easy chicken curry w/jasmine rice
Spicy Dr. Pepper shredded pork (in the crockpot) sandwiches w/ sweet potato fries & baked beans

 I had a new pair in the shop. After I listed them, I jumped in the shower and by the time I got out they were SOLD!! I was pretty happy with starting my week that way. Here's hoping your week is just as smile-inducing and surprising (in the good way at least)!

Monday Tidbits

If you paid attention to my Twitter or Facebook stream over the weekend, you saw that my weekend was full of 'adventuring.' On Saturday we went over to visit Fort Pickens in Pensacola (as you saw in my Macro Sunday post)

Then on Sunday we met my nieces and parents at the Zoo in Gulf Shores.
I promise the zoo there has more than goats, but I also liked this shot!
It was an active but fun weekend. Plus, it was Daylight Savings. . .yay!!! I love the extra daylight in the evenings.

Now it's Monday and that means it's time for a meal plan. Here you go!

Breakfasts: Cereal/oatmeal, breakfast burritos, cinnamon sugar croissants, omelets, Guinness spiced muffins, whole wheat waffles

Lunches: PB&J, pizza (from freezer), tuna noodles, leftovers, cheese quesidillas, grilled cheese w/soup, pizza quesidillas

Dinners:
Spaghetti squash meat pie
Grilled Chicken (w/ maple mustard marinade) w/roasted red potato salad & corn on the cob
Turkey shepherd pie
Grilled Shrimp w/green beans & rice mix
