Meal Planning (Benefits and My Process)

I don't know if your 2019 has already been as full of activity as mine, but staying organized is one of the key ways that has kept me from feeling like I'm running in circles. In addition to keeping a Bullet Journal to plan my days, I always make sure to create a meal plan each week. I've been doing this for many years and have found so many benefits to planning our menu, I thought I should give you some insight on those benefits as well as my own process for making our plan. First, let's talk about the benefits.
 Let me go into a little more detail about each of these.

1. Meal planning saves money because you're not buying items you might not otherwise use and you're not eating out as much. You're also not spending gas money on extra trips to the store because you need some additional ingredient. You'll also save money by not wasting it on throwing away food that goes bad because you didn't need it. As well, you can plan your meals based on what's on sale, what's in season, what's already on hand, and if you have coupons.

2. You can save time with meal planning because you don't have to take time away to take trips to the store every day to get the ingredients for meals. It'll also save the time spent agonizing over what you're going to cook that day. Instead, you've already planned it out.

3. By giving a little forethought to what you want to eat, you'll be able to ensure healthy meals are in your future. Often, we fall into the trap of cooking whatever's easiest and that's usually not the healthiest option. Instead, planning and shopping ahead of time are an easy way to keep you on track rather than taking the easy way out of grabbing fast food or eating junk/pre-packaged meals.

4. Making Meal Prep Easier was key for me. Knowing that most everything I need is already on hand, defrosted, and/or possibly already chopped/shredded/etc. makes the preparation of the meals go much faster and makes cooking less stressful.

5. Often, trips to the grocery store without a plan are a haze of zigging and zagging through the aisles. By making a meal plan you can make shopping easier by having a concise list of everything you need. This is especially true if you organize your list by the layout of the store. This will cut down on so much frustration and back-tracking on your grocery trips.

6. As mentioned above, having a plan will help you cut back on waste as you can plan to use leftovers from one meal for other meals or use items in the fridge, freezer, and pantry before they go bad. Lacking a plan makes forgetting about those items more likely.
We have pretty standard lunches like the one above, but it's a great opportunity to use up leftovers too. In this case, I used leftover hummus from a party as a side at lunch.

7. I know that making out my weekly menu helps me ensure that there's lots of variety in the meals we eat. Without a plan, there's the chance of eating the same things over and over. While we still have many of our favorites that I rotate, our menu lets me try out all the interesting recipes I find online and in cookbooks so we don't get bored of our favorites.

8. Finally, having a plan makes cooking more fun. Seriously! I'm not stressing about what we're going to have to eat or rushing in a frenzy through the process because I had to run out at the last minute for an ingredient. Instead, I've already thought through the process and can just enjoy the simple act of preparation.
Having a concise plan and list leaves room in your budget and cart for goodies like these snacks.

Now, it's not all sunshine and bubbles, there are a few downsides to meal planning.
- First, you may have planned and defrosted everything; but when the time comes, you're just not in the mood for what you were going to cook. 
- Secondly, sometimes your plans have to change because you have people over that you hadn't planned on feeding or you end up not being home and then you have those ingredients extra. 

One of our main pantry staples is spaghetti, but this version was special because I made the noodles myself!

For control freaks like me, those are indeed issues. But, I've dealt with them in a variety of other ways. For one, I always have the pantry/freezer staples to make simple alternative meals like spaghetti. And, if we get off our plan for some reason, I just shift the meals over a day and run them into the next week. It means that I have less to plan later, and that's always great.

Now, as for how I plan...

I use spreadsheets for everything. I just love all the little boxes! Either on Sunday or on Monday morning, I take a look at what's on sale at my favorite local store, what I have coupons for, and what I have/need to use on hand. This usually gives me a few ideas of what I can make. And, I ask my husband if there's anything he's craving (there usually isn't). From there, I start filling in my spreadsheet. Mostly, I look at the meats on sale and on hand to figure out the entree and then throw in the sides.

Most of the time, the breakfast and lunch ideas stay the same from week to week unless we're craving something in particular. Admittedly, I don't often even bother with breakfast during the week because it takes me so long to wake up. And, Pat's plenty happy with cereal most of the time. I'll usually make more of an effort on the weekends. 
This was my Christmas morning "special effort" breakfast: Monkey Muffins, baked bacon, and orange slices. 

Depending on our schedule for the week, I'll mark the days I/we won't be there so I don't over-plan. From there, I fill in the rest. If I plan to go by a recipe, I make sure to include that on my spreadsheet so it's easy to find. Once the menu is all planned out, I make a grocery list based off it, making sure to include snacks (fruit, chips, and granola bars) and any household products we need. Then, I re-make the list in the order of how I walk the store to make it easier on me while shopping. I'll admit that I usually go to two different stores: one large grocery chain for most items and a small farm market for produce. 

In addition to the weekly menu, I have a second spreadsheet of ideas for the following week. 
This one includes links to recipes that I found that I want to try and ideas I have for ingredients on hand (in the freezer or leftovers). With this list, it makes planning for the next week even easier.

I also have a whole other file of master recipes and links that I've saved by category (chicken, pork, vegetarian, soup, breakfast, dessert, vegetables, etc.) that I reference for ideas and standard recipes.  And, then there's Pinterest with its abundance of ideas. 

Once everything's planned and bought, it's important to make sure you defrost everything on time. This is often my downfall. (There's hard-as-a-rock chicken sitting on my counter right now that we're supposed to have for dinner tonight. Sigh.) I try to make sure I mark in my bullet journal to defrost what on which days, but sometimes things just fall apart. That's what those easy, pantry staples are for! And, that's okay. At least I know what we'll be eating tomorrow. And, Sunday's planned meal will just become Monday's! It's as easy as that. 
If I plan really well, I can even make some things ahead of time like breakfasts. One day I was super productive and made some easy granola and poppyseed muffins (not sure what recipe I used for these.)

I've tried to be as clear and concise as I can about my process, but I know I've left a lot open to interpretation. Once you get the hang of meal planning, you'll wonder how in the world you ever made decisions about meals before.

Cooking. . . Nothing tonight since I'll be away from home for a few hours. But I do have a full meal plan including this broccoli, cheese, and potato soup for tomorrow night, spicy black bean burgers on Saturday, and grilled pork chops on Sunday. Quick question: Are y'all interested in me sharing my meal plans again? I noticed those posts weren't getting much attention so I stopped. Let me know as I still plan every week's meals.

Eating. . .Nothing at the moment, but I am contemplating an everything bagel with avocado on it (though my menu dictates that I should make a smoothie.)
I gave in. . .The avocado was a little icky, but I got out what I could. It was delish!

Enjoying. . . A little more order and routine in my life now that the move is over, and I can get everyday tasks accomplished.

Finding. . .The magic of our new place unbelievable and awesome as we keep discovering new treasures.
Pat unearthed a 4x4 pole that had this odd metal ball and spike on it. I have no idea the purpose, but the patina totally catches my eye!

Hoping. . . The other house sells soon so we can really focus in on making this one ours.

Knowing. . . I have to have patience, the right buyer will come.

Needing. . . To really think about my business of being a jewelry-maker and make some decisions. Basically, I need to FOCUS.

Playing. . . Too many games on my phone. I really could be spending that time promoting my business, communicating with others, brainstorming designs or blog posts or whatever. Instead, I go brain-dead and mindlessly play puzzle games. GAH!

Reading. .. Nothing at the moment. Despite Harry Potter and the Chamber of Secrets sitting on my bedside table, I can't seem to pick it up (no worries, I have read it a few times already). I really should get to the library and find me something new. Any recommendations?

Relishing. . . In this living in the country thing, I think.
How cool is that oak tree rising from and above our little bamboo jungle?

Thinking. . . I really should plan something for my 40th birthday next week or I'll be disappointed I didn't. However, I have no idea how I want to celebrate it and would really rather someone else plan it for me. (I'm so very lazy.)

Wanting. . . It to stay warm longer so we can enjoy the pool. Alas, I think the temps have dropped too far to keep that hope alive.

Wearing. . . Warmer clothes today as even the air is a little chilly this morning.

Wishing. . . There was more time in each day. (Do I always wish for that in these posts?)

Meal Plan and Recipe Review

Over the weekend I made a big step for my business. . .at least for me. I'm really excited about it but not quite ready yet to spill all the details. Hopefully I'll have them all for you by the end of the week! In the meantime, let's talk food! Actually, there won't be much of that either since Pat and I have a super-busy week ahead. In fact, there's only three dinners that I'll be home to make this week. How crazy is that!? I hope they're good.

Breakfasts: Smoothies, Cereal, Grits/Oatmeal, Yogurt w/granola

Lunches: Soup w/cheese quesidillas, PB&J, Calzones, Bean burritos, Tuna noodles

Recipe Review

General Tso's Tofu: This has become a favorite in our house. It's pretty easy and totally yummy. I absolutely recommend it!

Chicken tortilla soup with chipotle & fire roasted tomatoes: I actually didn't eat this soup when I made it. I had dinner with a friend and threw this together real quick for Pat before I left. He said he really enjoyed it. I like that it came together so quickly! We had the leftovers today for lunch and I loved the spiciness and smoky chipotle flavor. I may make it again, but I think I might add some black beans or corn to it to give it a bit more somethin' somethin'.

Now to get back to work on this awesome new venture, at least I hope it's awesome. In the meantime, tell me what deliciousness you've made recently!

Menu Plan and Recipe Review

I seriously thought that since the Creative Spark e-mag was done, I would be getting back on track, no problem-o. Somehow, catching back up has been harder than I thought. . .and I've been seriously distracted. I feel like I'm being pulled in a thousand different directions and I don't know which way to focus. Oh well, so here I am late again with my meal plan. It is what it is.

Breakfasts: Cereal, Smoothies, Grits/oatmeal, Yogurt w/granola, Waffles w/fruit, Hashbrown baskets

Lunches: Leftovers, PB&J, Bean burritos, Calzones, Cheese quesidilla, Soup w/grilled cheese, Tuna noodles

Recipe Review

Vegetarian Fried Rice:  I wanted to like this so much. However, the brown rice turned out mushy - so the whole dish was mushy. We just couldn't stomach it and ended up ordering take-out sushi and fried rice. Perhaps another form of rice or chilling the brown rice first would have made this better. However, I won't be attempting this version again.


Creamy Tomato Tortellini Soup: (above) I've made this before, and it was good but a bit too rich for us with its two cups of cream. This time around, I used only one cup of cream and subbed vegetable broth for the other cup. It turned out perfectly. We lapped this soup up!

Chicken in Basil Cream Sauce: This dish was yummy even though I had to use dried basil as my fresh had browned. As well, I cooked some orzo in vegetable broth as a side and the cream sauce mixed perfectly with it. I may make this again.

Now to actually get some other tasks done and perhaps work on another blog post. . .wait, that can't be right! Please tell me you're running behind this week already too.

Whether you've noticed or not, it's been a crazy-too-busy-to-post couple of weeks for me. Once again, I'm getting back on track. Despite not posting my menu the last few weeks, we have had one and been sticking to it pretty well. As such, I've got quite a few recipes to review. You'll find those at the end of the post. For now, let's get to what's planned for this week.

Recipe Review

Monkey Muffins: (pic below) So easy, so amazingly good. 'Nuf said.

Roasted Broccoli and Cheddar Soup: This was okay. I'm not sure I'll make it again though; there are other similar soup recipes that we  like better (see bottom of list).

Grilled Chicken with Lemon Basil Pasta: I often make this without the chicken, and it is awesome as always. All the leftovers were eaten!

Cheesy Taco Casserole: (pic below) This was pretty good. It was very 'nacho-y'. I like that the chips stayed crisp in the oven, though I'm not sure how they did as leftovers as it wasn't touched later. It made a TON for just the two of us. I might make it again if I can figure out a way to reduce the size.

Slow Cooker Soy Glazed Chicken with Stir Fry Veggies: This was pretty good. The chicken ended up a little tough but that was possibly my fault for leaving it in the cooker too long. I might make it again.

Jalapeno Popper Stuffed Mushrooms: My own recipe; I love it every time.
While the stuffed mushrooms can be made vegetarian with the omission of bacon, I only use one slice per mushroom cap. It really ups the flavor.
Bean and Chorizo Jambalaya: I substituted soy chorizo in this as we had it on hand from another recipe. It was good. However, it was more of a chili-flavor than a jambalaya. We ate it, but not the leftovers. I probably won't make it again.

Sesame Chicken and Noodles: This was okay. It was super simple, but probably not something I'll make again.

Broccoli Cheese and Potato Soup: I've made this before and we really liked it. Again, it was a winner in our house.

That's the plan for now. Things may change though. We'll have the nieces over the weekend and some friends will be in town too so you never know. What's on your menu for the week?

Menu, Recipe Review, and Tidbits

After so much chaos for the last several weeks (or is it months now. . .), I have to boast that I did pretty darn well staying on track with the menu this past week. We didn't eat out near as much since our plans didn't change as often as they normally do. Actually. . . writing that out kinda makes me feel like we're settling into a boring routine rather than doing something admirable. I guess I'll get over that soon enough, especially since I should realize that we ate really well.

I actually made the above breakfast over the weekend. Now, if I could only get my butt in gear and get breakfast made/eaten on the weekdays as well. It's always a struggle isn't it? Here's what I hope we'll have this week.

Recipe Review

Since I actually made most of the meals on the menu, I have some recipes to review. Woohoo!

Spicy Peanut Butter Tofu: This has become a staple tofu recipe in our house. Peanut butter and spiciness = WIN!! I did use reconstituted PB2 for the peanut butter and it worked out really well.

Portabella Mushroom Cheesesteaks: I'll admit that I was on the fence about these. I'm not a huge bell pepper fan and Pat doesn't really do onions. But they looked so good. I just tried to make sure I got more onions and less bell peppers and vice versa for him. We LOVED these. He went on and on about them. Since they  were so easy, I'll probably be making them again.
Portabella Mushroom Cheesesteaks (with sweet potato waffle fries)
30 Minute Veggie Tortellini Soup: We enjoyed this. That's about all I can say about it. It was a good, healthy-ish soup. I wasn't a huge fan of the green beans in it, but it was a fine soup. I may make it again.

Easy-peasy Calzone Recipe and Meal Plan

The chaos my my Mardi Gras ball has died down for yet another year as we partied hard over the weekend. Somehow in all the fun, I didn't get a single picture. . .I have no idea how that happened except that there were no pockets in my costume to carry my phone. Now it's time to come down from that high and return to the routine.

In all the prep and excitement, I spent the last few weeks trying to use up some of what we had on hand for meals as well as making some easy dishes. I even came up with an easy dish of my own, that was a hit with the hubby.


It really was easy with just a few ingredients and little prep time.

Easy-peasy Calzones

Ingredients:
Canned pizza dough
Marinara sauce
Cheese
Your favorite calzone stuffings (I just used pepperoni)

Directions:
~Heat oven to temp. recommended on dough
~Roll out dough onto baking stone or sheet, then cut it in half

~Pre-bake dough as instructed on packaging (if no instructions to pre-bake, then skip this step)
~Spread your sauce in the middle of your dough pieces, careful to avoid the edges if possible.
~Top the sauce with your favorite toppings and cheese

~Fold the dough over (in half), re-position them on your sheet, and press the edges closed with a fork.

~Bake as directed on packaging until edges crisp and top golden brown (mine required a little more baking time, but my oven undercooks everything.)

~Enjoy!

Now that I've used up most of the staples and freezer items, it's back to thinking a little more about my menu. Fortunately, I recently pinned a bunch of yummy-looking vegetarian recipes and that made it all the easier to get the menu made. Here's what I expect we'll be eating this week.

Menu Plan and Recipe Review

It's BALL week, and I don't mean those usually round, sporty balls or even the ones I definitely don't want to talk about on the interwebs. Nope, it's the week of my Mardi Gras ball! Yes, Mardi Gras itself isn't for a few more weeks, but the season starts early in these parts. 

My week is full of meetings and prep and all kinds of fun that takes me out of the house and leaves my hubby alone. Alas. . . along with my man, my menu suffers. 

Breakfasts and lunches are pretty much repeats of last week, and there are only two nights I'll be home to make real meals.

Tonight we're having Chicken, potato, and leek pie.
Tomorrow I have planned (since it's his favorite and he can have leftovers) Beef Stroganoff and green beans.

Is it horrible that I'm leaving him stocked with leftovers, cereal, lunchmeat, and canned ravioli? He doesn't seem too perturbed so I guess I shouldn't fret so much. 

Despite my tardiness, I had a semi-related meeting yesterday that kept me from blogging, I'm linking up with Menu Plan Monday at I'm an Organizing Junkie.

I do have one recipe review real quick.  It's for the Vegetarian Dirty Rice that I  made last week. I'll preface the whole thing with, we liked it in the end.
Sooooo. . .the making of it was a disaster. When I added the rice and turned the heat down to medium, all the liquid cooked out pretty quickly and began scorching the bottom of my pot. I added a little more veg broth and let it cook. When the 45 minutes were up, the rice was still hard. It ended up cooking for another 25 minutes with about another 2 cups of broth added before the rice ever softened up enough to eat. As well, I had to turn the stove down to low so all the broth wouldn't cook off immediately. I think that if I had turned it down to low initially instead of medium, I would have had more success. The dish didn't taste too bad in the end, despite being a little overcooked. I may try this again with that one change, low temp instead of medium. Like I said it had a great flavor, but I was just so frustrated with the whole process.

So that's it. Lots to get done this week. I hope I can pop in and share something else with you later in the week, but I'll have to wait and see how crazy it all gets around here.

Meal Plan, Despite Distractions

Once again, I've let almost a whole day get by me. That's not to say that I haven't gotten anything done, just not the tasks on my list. It was too easy to get distracted by beads and inks and paper. . . .
How could I not!?
Thankfully, I did make the menu first thing this morning.

Breakfasts: Cereal, Smoothies, Oatmeal/Cheese grits, Yogurt w/easy granola, Cheese omelets, Waffles

Lunches: Leftovers, Tuna Noodles, PB&J, Cheese quesidillas, Chicken salad sandwiches, Bean burritos, Soup w/grilled cheese

Dinners:
Steak w/boiled potatoes & green beans
Vegetarian Dirty Rice w/cauliflower
Taco Soup (from freezer) w/tortilla chips
Spaghetti w/salad

So far, I'm not even doing very well sticking to the menu (breakfast didn't exist and lunch was takeout.) I do know dinner will go off without a hitch, the steaks have finally defrosted (we were supposed to have them last night!) I'm linking up with Menu Plan Monday at I'm an Organizing Junkie.

Stovetop Mac-n-Cheese Recipe and Weekly Menu

Despite having a menu each week, we hardly ever stick exactly to it. Sometimes, we're craving something else or plain don't want to eat what's planned. Sometimes I forget to defrost something or just don't feel up to getting involved in a complex recipe. One of these scenarios happens a couple times each week. I try to have a few specific ingredients on hand for back-up meals: there's always pasta sauce, canned soup, salsa, tortillas, bread, peanut butter, and lots and lots of glorious cheese. It's my crutch; well. . .that and the pasta. As such, I've become quite skilled at making a one-pot stovetop mac-n-cheese that's almost a complete meal. It's my go-to replacement meal.

You can find the mac and cheese recipe at the end of this post, but let me first share our (proposed) menu for the week.

Breakfasts: Cereal, Smoothies, Grits/oatmeal, PB toast w/apple, French toast, Scrambled Eggs

Lunches: Leftovers, Tuna noodles, Turkey sandwiches, Cheese quesidillas, Calzones, Bean burritos, Soup w/grilled cheese

Dinners:
Leftovers
Chili (from freezer)
Spaghetti w/salad
Steak w/boiled potatoes and green beans

As you might be able to tell, we had one of these weeks last week where we weren't in the mood for the menu-offerings. So, several of these menu items are repeats from last week. I'll be linking up with Menu Plan Monday at I'm an Organizing Junkie

As for the recipe. . .let me preface it with the fact that it's my own take on The Pioneer Woman's Fancy Mac and Cheese minus the baking. As well, I've shared a similar recipe of my own design previously. I called it Shrimp Mac-n-cheese with Bacon. I like making pasta with cheese because it's so customizable. You can add meat or none, veggies or none, and use any combo of cheeses or pastas you have on hand. I've added camelized onions and smoked sundried tomatoes and sausage and numerous other concoctions to this basic stovetop mac-n-cheese. As well, I've reduced it by as much as 1/4th. The recipe I'm sharing today uses an entire box of penne pasta (so I really shouldn't call it MAC-n-cheese. . .but you get the point). A whole box is A LOT of pasta, more than the two of us could ever consume in one sitting. I'd say that this recipe probably makes about 6 servings, but I'm no nutritionist. I just know how much the two of us can eat.

Okay. . .on with the recipe.

Stovetop Mac-N-Cheese
Ingredients:
1 (16oz) box of pasta
1/2 C Frozen peas
1/4 C Butter
1/4 C Flour
2 C Milk (in the most recent version of this, I used 1 1/2 C milk, 1/4 C almond milk, and 1/4 C cream)
2 C Grated Cheese (I used 1/2 C each of  Parmesan, cheddar, fontina, and mozzarella)
Salt & Pepper to taste
Garlic powder, onion powder, & ground mustard to taste
4-8 slices of bacon, chopped

Instructions:
1. Boil pasta according to instructions on package, during the last 4 minutes add the peas. 

2. Drain, reserving some of the pasta water.
3. Return empty pot to stove and melt butter on medium heat.
4. Whisk in flour and continue to whisk for a minute or two. Slowly add the milk, whisking the whole time. Let this cook for a few minutes to thicken slightly. 
5. Remove heat, then add cheese(s) and seasonings. Stir until well-combined.

6. Add pasta/peas back into the pot with the cheese sauce, stirring to distribute the creamy goodness.
7. Add bacon to pasta, stirring to combine.
8. If the sauce is too thick, add a little pasta water at a time to thin it out. 

That's it.

Getting Back on Track with Meal Planning

It's been weeks since I last shared my menu. This has been due mostly to being sick, but the holidays made everything wonky too. I'm so relieved to be feeling better and am looking forward to welcoming in the new year with better health and a plan, at least a meal plan in any case!

Breakfasts: Waffles; cereal; Bacon w/eggs, toast, & fruit, Muffins, Omelets

Lunches: PB&J, Soup w/grilled cheese, Tuna noodles, Turkey sandwiches, Cheese quesidillas, Calzones, Bean burritoes

Dinners
Chicken with Mustard Cream Sauce w/mashed potatoes and broccoli
Ham steaks w/field peas & spinach salad
School soup (from freezer)

Menu Plan and Recipe Review

Something happened to yesterday. It went POOF! I remember waking up, bustling about some, and then it was just over. What the hay? As such, I am once again late to the Menu Plan Monday party. sigh. Let's get on with it shall we?

Breakfasts: Cereal, Smoothies, Hashbrown baskets, Oatmeal/cheese grits, Waffles, Omelets

Lunches: Leftovers, Soup w/grilled cheese, Turkey sandwiches, Cheese quesidillas, Calzones, PB&J, Bean burritos

Snacks: Granola bars, Kale Chips, Chips w/salsa, Raw fruits and veggies, Cheese, Crackers/pretzels w/PB

Recipe Review

Parmesan Wasabi Edamame: I was so, so excited to make these and share them at a friend's house while we watched the Iron Bowl. (ROLL TIDE!)  I mean it's all ingredients I love: parmesan, wasabi, edamame. . .how could it go wrong? These were definitely not inedible. We all ate some of them. However, they just didn't have the punch of wasabi I was hoping for. I MIGHT try these again and really up the wasabi as well as use some REAL parm instead of the kind in the green shaker. Hopefully I'll get more bang from them.

Baked Ravioli: This is the second time I've made this recipe, and once again we liked it a lot. I'm all about the simplicity and ease of a recipe and this one couldn't be easier. I mean, the ravioli are STILL FROZEN, no defrosting!! A great recipe for when you really don't want to mess with a whole lot but still want something tasty. I'm sure I'll make it again.

Another Monday, another menu. . .I don't even know what else to day about it right now. I'm feeling all grumpypants (mostly at myself for not having this done yet) all of a sudden. Anyway, let me go ahead and share what I plan on us eating this week.

Recipe Review

Veggie and Tofu Stir-Fry: I've made this recipe several times now and we still like it. I reviewed it initially here.

Chicken Marsala: Oh, heck this was good. Let me admit that though I live in the South, I've never fried chicken before. While it was indeed finger-licking good, it made one heck of a horrendous mess. I wouldn't mind making it again but only on special occasions.

Peanut Butter Cup Pretzel Bites (meal plan and recipe review)

Much like my Cinnamon Sugar Twists, I shared images of these bites online and saw some interest in them. So, I figured I'd share with you how easy they are to make.

Before I get to the instructions on those goodies, bear with me as I share my meal plan and recipe review for the week.

Recipe Review

Cheesy Penne with Broccoli: This came together pretty quickly and was just what I needed to make after a long day; something easy and tasty. I really liked it.

Delicious Ham and Potato Soup: This particular recipe has become a staple at our house. When I say that I'm making potato soup, this is the recipe I mean (my mama's recipe that I love so much is too labor intensive for me most of the time). Be warned that the chicken bullion and the ham used in this recipe make it quite salty. I recommend only adding a little salt at a time.

Now for the yummies. I'm not completely sure I should share this recipe though, because these are SO EASY that you might end up making them all the time. I don't want to be blamed for your new peanut butter pretzel bite addiction. If you've got a liking for sweet, salty, and crunchy like I do; don't say I didn't warn you.

Peanut Butter Cup Pretzel Bites

Ingredients:
Snyder's 'Snaps' Pretzels
Reese's Mini Peanut Butter Cups

Directions:
Heat oven to 250 degrees.
Line a baking sheet with parchment paper.
Spread out pretzels in a single layer on the baking sheet.
Place a peanut butter cup in the center of each pretzel.
Bake for 4-5 minutes until cups start to soften.
Remove baking sheet from oven and smoosh a second pretzel on top of the first.
Cool bites in the fridge for about 20 minutes.

That's it. Too easy. I warned you.
