Making the Most of the Day

It really is amazing how much you can get done in a day. (SOMETIMES - notice the sometimes is all caps, underlined, and in bold. Most days just don't have enough time in them)
It wasn't until we were snuggled in bed that I realized that we never once turned on the television all of yesterday. Of course, at that point I hit the power switch (cause I have to have the noise to get to sleep) and promptly dozed off. I do think the lack of TV played a real part in getting so much accomplished.

Pat and I moseyed around the Gulf Shores/Orange Beach area for several hours yesterday, taking in the scenery and contemplating getting a hotel and staying the night (since he's off today.) However, we just couldn't bring ourselves to do it, knowing we had two kitties at home who didn't have the provisions for that kind of thing.
Instead, we hiked a trail in the state park that we've been eying for a while. It was the highlight to my day.
I was mesmerized by the reflection of the trees on this pond.
This guy was out enjoying the day as well.
 
These trees had me chuckling (is it just me or don't they look like they're making out?)

 And I just adore the fact that you can find palms on a hiking trail in January here!

Once we got back home, I started on a little project for YOU. It's not near ready yet. But, here's a sneak peek and a reminder to keep your eye out for more.

TUESDAY

B: Yogurt with granola and honey, oranges
L: Chicken salad sandwiches
D:  Pasta Carbonara (with ricotta), salad

WEDNESDAY
B: Cereal
L: Mushroom soup, bread
D: Tacos, corn

THURSDAY
B: Peanut Butter toast, fruit
L: Quesidillas
D: Orange herb roasted chicken, easy scalloped potatoes, frozen mixed veggies

FRIDAY
B: Cereal
L: Calzones
D: Pat has gig at Blue Gill (dinner there)

SATURDAY
B: Waffles
L: Chicken rollups
D: Honey and spice pork chops, broccoli cheese rice, peas

SUNDAY
B:Egg burritos
L: PB&J
D:Pot roast, carrots, potatoes, rice

I know several of these are repeats from last week, but as usual the week got complicated. As such, it was a bit easier to make the menu this week and still get a chance to try out the recipes I want. Of the recipes I did get to try last week, all were fairly good and will most likely be repeated. I did not get to try the cinnamon bread as I realized I needed a stand up mixer. Unfortunately, that is not is my cabinet of appliances yet. Oh well.

    It is nice to see a couple really enjoying each other, and relishing in their relationship together.

    I'm glad you enjoy my ramblings. Sometimes I wonder if anyone is actually paying attention. Hehe!

    Pat and I have to enjoy each other, it's just us and the cats here. Most of the time, that's just enough!
