Meal Plan and Recipe Review

As you may have guessed (as I definitely hinted at it), I spent a long weekend camping. I'll share some of the sights and sounds and tastes from that trip in the next day or two but first, let me go ahead and get my meal plan for this week posted before I get any more behind. Yes, it's another Menu Plan Monday on Tuesday.

Breakfasts: Cereal, Breakfast sandwiches, Smoothies, Eggs w/sausage and toast, Pancakes

Lunches: Sandwiches, Bean burritos, Paninis, Tuna noodles, Soup w/grilled cheese, Leftovers, Cheese Quesidilla

Dinners
Linguine Alfredo w/steamed broccoli
Ham steaks w/field peas and baked potatoes

Recipe Review

General Tso's Tofu: As I said on the Sunday before last, this recipe was so good.  We ate almost all of it. I did leave out the dried chilies as it wasn't something I could find. Instead, I used dried pepper flakes and a little bit of chili oil to pump up the temperature and flavor. It worked out just fine. I'll definitely be making this again.

Egg Roll Manicotti: These were super, duper easy to make. However, the flour-y taste of the egg roll wrappers wasn't particularly to my liking. I'll keep this in mind for an easy meal, but I'm not sure if I'll make it again or not.

Veggie Cheese Soup: This soup was better than we expected. I love all the veggies in it, and it was tasty too. I will possibly make it again.

Easy Whole Wheat Pizza Dough: I really, really like that this dough didn't need a rising time. However, there was just something.  . . 'off' about the flavor. Maybe too yeasty or too wheaty or something like that. I'm not real sure. I probably won't make this again and will continue my search for the perfect pizza dough. Let me know if you've found it!

Lemon Basil Pasta:  I often make this without the grilled chicken suggested, and it's pretty much become a staple around here. It's quick, easy, and so very tasty!

Fontal Polenta with Mushroom Saute: I've made this before and really enjoyed it. This time I could only find garlic basil polenta, which altered the taste for me. It was still pretty yummy though.


I think that's everything for now. I already know my meal plan will have to change this week because of a few obligations that have already arisen. So, you may see a repeat of some of these next week. At least that makes planning a little easier on me. What do you have planned for your meals this week?   1. Retry wonton wrappers rather then the egg rolls. They are thinner with less floury taste :)
